From 1999-2004 as Quality Manager in the processing plant of GRUPO SADA (Located in Castro Riveras de Lea, Lugo).
From 2004 to 2013 as Senior Researcher in the areas:
- Development of experimental models of salmonella infection for additive evaluation.
- Intestinal health of broilers.
- Food safety and packaging of poultry meat.From 2013 to 2018 as R&D Director coordinating the following areas:
- Food Security.
- Meat quality.
- Development of new products.
- Research projects both national and international related to active and intelligent packaging for packaging poultry meat, and food safety related to the control of pathogens throughout the production chain.
- Participation in different publications related to the control of pathogens at the intestinal level of birds and during the processing and extension of useful life of poultry meat in a modified atmosphere.
- Final degree and master’s projects related to security
- food and poultry meat packaging.
- From 2018 to 2021 as Quality and R&D Director of GRUPO SADA.
- Currently Director of Matasterlab Trouw Nutrition Spain). Auditor of the National Accreditation Entity (ENAC), since 2008 for microbiological tests including detection of salmonella in foods and samples from primary production.
Gonzalo E. Almaraz
Veterinarian from the University of Buenos Aires (2010) and Specialist in poultry production from the National University of Luján.
Gonzalo E. Almaraz began his career as a teaching assistant in 2006 until 2011 at the U.B.A. At the same time, he was working for 4 years as a poultry farm supervisor at COTO C.I.C.S.A from 2010 to 2014. Finally, for more than 9 years, he has been working as a poultry commercial technical advisor for Vetanco S.A.
Gonzalo E. Almaraz has several interventions at international conferences and several published works.

Leonardo Thielo
Leonardo Thielo is a veterinarian from the Lutheran University of Brazil. Thielo has more than 23 years of experience as a researcher and entrepreneur.
He is co-founder of the companies F&S Consulting, Cibit, Fluxo Máquinas and Trinovati. He is also a collaborator of the Produtor do Bem Certification Seal (First Seal of Animal Welfare in Latin America).
He is also a member of the Technical Council of Facta and World’s Poultry Science Association Brazil.
Regarding his involvement in the publication of technical contents, he is the author of four chapters for books on the subject of Animal Welfare. He has developed relevant works in the areas of One Health, Animal Welfare and Disruptive Technologies for Agribusiness.
Ing. Eduardo Cervantes
Eduardo Cervantes is Technical Director of the meat quality and processing rooms workshop at LPN 2023.
Born in Barranquilla, Colombia. Industrial engineer with 44 years of experience in poultry processing and related areas. The last 23 years as a consultant.
Eduardo Cervantes is an expert in productivity improvement – quality, yield and cost – with a focus on micromanagement to reduce integral waste with innovation.
Long experience as a consultant
The work is developed with the following methodology when visiting processing plants and farms:
- Problems are detected – Opportunities for improvement – Opportunities for improvement – Problems are detected – Opportunities for improvement – Problems are identified.
- Explanation to those responsible of the reason for their origin
- Explanation of the aspects of anatomy and physiology of the birds involved in each of the slaughter stages
- Incremental and disruptive solutions are proposed that are characterized by: Simplicity, economy, ease of commissioning, and efficiency.
Furthermore, it is emphasized for those involved – administrative and operational staff – in these tasks the importance of having adequate ergonomic and industrial safety conditions so that they can perform their activities with the management criterion “Less is More Productivity and Profitability”.
One of the basic premises to guarantee a long permanence in a very dynamic and competitive market.

- Organizer of five International Seminars on Broiler Processing Management – Barranquilla, Colombia 2012, 2014 – 2016 – Panama. 2018, Cartagena 2022.
- Author of five (5) books on Poultry Processing. – El Pollo, paso a paso su procesamiento industrial – Cómo alcanzar el Grado A – Itinerario del Control de Calidad – Gerencia Productiva – Aspectos que afectan la Calidad, Inocuidad y el Rendimiento: Tomos 1 y 2.
